This lot gets its name from the village Chelbesa, where the wet mill is built - to which coffee from 248 farms is delivered for processing, with the village's growers are also paid an off-season bonus payment of 2.5 birr/kg.
When delivered, the cherries for this anaerobic lot are inspected and then floated for final selection. The chosen cherries are then tightly packed and sealed within plastic containers. Starved of any new oxygen, the cherries ferment anaerobically for 18-24 hours. After the initial fermentation, the cherries are de-pulped and fermented once again in ceramic tanks for up to 12 hours.They are then dried on raised beds for 15 days, turned frequently to ensure even drying.
The wet mill has been developing quickly since 2019 - ceramic fermentation tanks have been built, a gravel road for the village, as well as a large warehouse for coffee storage. In addition, there are community projects in development, such as plans to deliver computers to the high schools nearby.
Yirgacheffe is considered by many to be the birthplace of coffee and the coffee trees grown in the region are a naturally occurring mix of heirloom varieties cultivated among other species in coffee gardens and coffee forests.
