The main purpose of the "Caficultores de Anserma" cooperative is the commercialization of coffee and other agricultural products seeking to promote and improve the economic, social, technical, and cultural conditions of the associates. The cooperative has 2083 associated coffee growers who cultivate excellent quality coffee with dedication and passion. With the new General Manager - Luis Miguel, they have looked to embrace technology and the shift towards specialty coffee production.
They have started to experiment with producing naturals for the first time without putting the risk on the producer. To start this project they selected a few local producers who are known for their quality and set up a sorting station to select the ripest Castillo cherries and ensure uniformity. After separation, the coffee is then put in a special drying box where it is dried at 35-40C for 100-120 hours. The result is this lovely, sweet coffee - and this is an initial trial. Luis and the team at the co-op hope to expand and improve the capacity to involve more producers in this program.
