This coffee has been produced by a relatively new formed cooperative called Kennisa, which is part of the larger Kata Muduga union. With 305 smallholders contributing to the lot, the workers and the management of Kennisa have done great things to ensure such high quality despite being operating on their own for only three years.
The lots are made up mainly of the endemic landrace varietals that have been passed down within the families throughout the years, along with the culture of ripe picking and very clean processing methods.
On the day of picking the cherries are de-pulped and cleaned using an eco-pulper and the coffee is then placed on beds where it is gently dried, being shaded during the hottest parts of the day and moved frequently by hand.
From here the coffee is transported to the capital Addis Ababa as parchment, and only after the purchase contract is in place, it is prepared for export using modern equipment that removes the parchment layer and grades the coffee by density, size, and optical sorter.
