Jorge Silva is a coffee producer from the village of San Francisco in Huabal. San Francisco is one of our partners - Falcon Coffees Peru - largest bases of producers and produces some of the best and most consistent coffees in the area.

Huabal is a district within the Jaén province of Cajamarca, with farms sitting in altitudes for 1200 to 2100 masl, and it has a huge potential for quality coffee, but due to very poor infrastructure, many of the producers lack the resources and knowledge to unlock that potential. Many producers in Huabal had been regenerating their farms with the "Catimor" variety, which had been promoted by the government and multinational buyers, but in the higher altitudes often these trees produce little and the quality is poor.

But good management results in improved quality, and with the premiums that they’re receiving for it, more and more producers are re-planting "Caturra", "Bourbon" and "Catuai", which can yield higher and produce much better quality coffee. That growth of production quality, along with the various climates and soils in the mountain range of Huabal, contributes to diverse cup profiles and complex coffees.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
