This coffee is produced by a community of coffee growers known as Ephtah Specialty Coffee, an organization dedicated to building sustainable and collaborative supply chains that benefit customers, farmers, and their communities. The company emphasizes promoting the role of women in the coffee industry, recognizing their pivotal role in driving social and economic change in Ethiopia. In 2023, Ephtah acquired its own drying station in Lalesa, Gedeb. With over four hundred drying beds, it is the largest facility in a region renowned for producing high-quality Ethiopia’s coffees.
This coffee lot is naturally grown under the shade of trees, primarily Ensete (false banana tree). The shade helps moderate temperature and humidity, resulting in a smoother, less acidic taste profile compared to sun-grown coffee. As a result, these Ethiopian coffee beans develop more complex and nuanced flavors due to the slower ripening process, which allows for a greater concentration of sugars and oils.
For the anaerobic natural process, only the finest cherries are selected and fermented in sealed plastic barrels for nine days. This is followed by a drying period of 13 to 18 days, until the beans reach their ideal humidity level.
