The "Wiwitz" means "Up the Hill" in the Mayan Popti language. The farm is unique in its artisanal, small-scale production at high altitude , which ensures a sweet, clean and balanced cup. Lucio Rodriguez and his wife, who learned coffee cultivation from their parents, run the farm independently and emphasize the dedication of individual smallholder farmers.
At Wiwitz, the coffee is depulped the same day it is harvested, using an artisanal wet mill. The beans then are dry fermented and washed in plastic containers. Sun-drying takes about four days, till coffee reaches the ideal moisture level.
