Located in the foothills of Mt Kenya, Kii washing station is owned and supplied by 3380 small holder farmers. On average, most farmers have approximately 500 coffee bushes, very typically shade grown under Avocado or macadamia trees. After the red ripe cherry is delivered to the processing area, it undergoes meticulous sorting to ensure exceptional cup quality of their coffee. Processing at Kii wet mill adheres to stringent quality-driven method.

Once pulped, cherries are delivered to fermentation tanks where it will ferment for about 16-20 hours depending on the ambient temperature at that time. The coffee is then fully washed to remove traces of all mucilage in gradient water channels using water from nearby Kii river.
The parchment will then be distributed on the raised drying sunbeds where it will dry slowly over the course of around 12-20 days. The parchment is covered during the hottest time using shade nets. The coffee is then bagged and sent to auction at the Nairobi Coffee Exchange a few hours south.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
