Since 1896., the Cambraia family has been growing coffees in the Santo Antônio do Amparo Village of Brazil. Their passion for excellence drives today’s fourth generation of Samambaia to produce beautiful coffee lots under sustainable and consistent processes.
We're happy about our continuous partnership with Henrique, and seeing Samambaia operating at utmost excellence is simply inspiring. The manager of Samambaia is Daniela Teixeira, a young woman and an absolute legend at what she does - to have this 900 hectare operation fully trusted to her speaks volumes, and she does an excellent volume managing a farm of this level, continuously striving to sustain the quality, improve the outcome and manage the fantastic team there.

This lot is an anaerobic natural processed Yellow Catucai, and is a fantastic demonstration on how bright, fruity and complex coffees from Brazil can be. The cherries are mechanically picked, sorted and afterwards fermented in plastic tanks, where the variety develops further complexity. For the fermentation, they use a yeast that they have grown themselves from the mucilage of the cherries, so there are no additives to provide the flavour. The coffee is then dried on raised beds and hulled, to be later sent for quality assurance and final processing in Sancoffee, the cooperative we work in Brazil.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
