The Story

KALVE Desaix sits just steps from the Eiffel Tower and Champ de Mars, an unexpected pocket of calm away from the crowds. The Latvian design studio Field built the interior around a concept called "Archive of Lost Plants," a mineral, moody space of semi-transparent textiles, metal reliefs and seating shaped as if worn slowly over centuries. It's a place made for pausing rather than rushing through, laptop and dog both welcome at the table. Alongside espresso, filter coffee and matcha, Sproud plant-based milk and decaf come at no extra charge, the same as everywhere KALVE goes.
