Chirinos is a long-standing cooperative in Peru, established in 1968 by 36 coffee producers who aspired to sell high-quality coffee to international specialty markets. Chirinos coffee is hand-picked by co-op members and their families. Each producer group works with an experienced agronomist who provides technical support in organic production and quality control.
Chirinos uses strictly organic compost, which they produce themselves using a unique composting system called "gaicashi". This method avoids the use of pesticides and makes the process as sustainable as possible.

This lot is a blend of coffees from three producers across the Chirinos region, where the average farm size is around 1.5 hectares. The coffees were carefully selected and blended to capture the typical flavors of the region. Each lot comes from high-altitude areas and is harvested early in the season, then processed on the producers’ farms. After harvesting, the coffee beans were hand-pulped, fermented in fermentation tanks, and then dried under the sun until they reached a specific moisture content.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
