Our second year of buying from Arlindo and we couldn't be happier. This coffee comes from a very small, 2.1 hectare family owned farm that is located in the Fagundes Community, in Santo Antônio do Amparo. They are members of the Fagundes Community Association, which was founded with the purpose of strengthening the community's growers, as well as the local coffee-growing.
We feel so privileged to cooperate with this small family operation, where the coffee trees are well tended and luscious. Although, this crop has been particularly devastating for them, because the farm was hit by hail that destroyed 50% of the coffee flowers, thus, the potential harvest. However, it does not stop their pursuit of quality, as this year their coffee was selected to be evaluated in the national level of Cup of Excellence. It was then that we shook hands once again and promised each other - as long as both Arlindos continue to grow coffee, KALVE will continue buying from them to support the outstanding quality that they are producing.

As Arlindo Sr. himself says - the yellow cherried Arara is the variety that best displays the flavour of the terroir. The cherries were handpicked, sorted and then collected in a pile, inoculated and fermented on the cement patio. Afterwards, the cherry was spread evenly to dry, frequently turning them to ensure no unwanted fermentation happens. Afterwards, the cherry is removed, cleaned and sent to our partnering cooperative Sancoffee for quality assurance and final processing before logistics.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
