The climatic conditions and natural features of Nyeri create an ideal environment for coffee cultivation. The region is known for its rich red volcanic soils, abundant rainfall, and warm, mild temperatures — all key factors in producing high-quality coffee.
As harvest time approaches, coffee producers in Nyeri handpick only the ripest cherries. Once harvested, the cherries are bagged and transported to the Gichathaini Factory’s wet mill. There, they undergo de-pulping to remove the outer fruit layer. The remaining parchment is then placed in fermentation tanks filled with water sourced from the nearby Ragati River. This clean river water plays a crucial role in the fermentation process, helping to break down the mucilage on the parchment.
After fermentation, the coffee is spread out on raised beds to dry under the sun until the beans reach their optimal humidity level.
