Kalita Wave

The Kalita Wave dripper is a pour-over, similar to a Chemex or V60, which makes for a clean cup of coffee. This contrasts with the robust profile of full-immersion brews, such as the French Press, for example.

Yet while similar to the Chemex or V60, the Kalita Wave has a markedly different extraction configuration. Rather than water dripping through a singular hole, it features a flat bottom with three extraction holes. This eliminates any channelling of water in the coffee bed, resulting in an extremely crisp cup. The dripper also has minimal contact with the filter, allowing for consistency in temperature and an even dispersion of water.

Brewing time: 2 minutes

What you will need:

  • Kalita Wave dripper
  • Kalita Wave paper filter (size 185)
  • coffee
  • server or a bigger cup (aprox. 300 ml)
  • boiling water (preferably filtered)
  • timer
  • scale
  • grinder (if you want to grind the coffee by yourself)

INSTRUCTIONS:

STEP 1: Place the filter paper in your Kalita Wave and give it a quick rinse to heat up your vessel and to get rid of any paper flavours that may be there. Remember to pour out the water before brewing. 

STEP 2: Heat your water to boiling temperature (preferably 96-98°C).

STEP 3: Grind coffee coarsely, from scale 1-10, use grind size of 8 (you can skip this step, if using pre-ground coffee).

STEP 4: Place ground coffee in the filter evenly to form a flat bed. For this recipe, we are going to brew with a ratio of 22 grams of coffee to 300 grams of water.

STEP 5: Place your Kalita Wave and server onto your scales and tare them off, letting you weigh out the water as you’re brewing.

STEP 6: Start your timer, then slowly introduce 66g of water onto the coffee bed and ensure all coffee grounds are wet and watch it bloom.

STEP 7: In 45 seconds, the blooming process should be done. You may start the second pour of 300 grams of water within the next 1 min 15 sec making bigger and smaller circles. Try to avoid pouring on the paper filter. Try to pour 360 grams of water in exactly 2 minutes. 

STEP 8: After pouring 360 grams of water, turn the dripper clockwise a few times thus leveling the coffee grounds evenly and ensuring even extractio.

STEP 9: Wait till all of the water has been filtered out, take off the dripper and enjoy!
